We love an easy meal that whips together in less than 5 minutes using pantry staples, especially when it's spicy, nutty, garlic-y Sichuan dry noodles! Our friend Jen over at Indulgent Eats has just the recipe for us. Using only 7 ingredients (or less!) and ready in just a few minutes, these sweet, nutty & spicy noodles are perfect for a weeknight dinner, late night snack, and everything in between.
RECIPE
Ingredients
- 6 oz. Taiwanese instant noodles (3 bundles), or your preferred noodles
- 4 tbsp. peanut butter (more to taste)
- 1 tbsp. Chinkiang vinegar (more to taste)
- 2 tbsp. Sichuan Chili Crisp (more to taste)
- 1 tbsp. sesame oil (more to taste)
- 2 stalks scallions, chopped (more to taste)
- 2 tbsp. fried garlic (more to taste)
- 1 tbsp. soy sauce (optional)
Instructions
- Boil water and cook instant noodles for 3 minutes or according to package instructions
- Chop scallions and set aside
- Combine peanut butter, Chinkiang vinegar, chili oil, and sesame oil in a large bowl
- Once noodles are cooked, use tongs to transfer them directly to the bowl, stirring to coat with the sauce and adding noodle water if sauce is too thick. Taste and add sauces to personal preference
- Top with scallions and fried garlic and enjoy
